Excellent dry rub! This was perfect for baby back ribs. I cut the amount of ground chipolte powder in half and made up the difference with some additional brown sugar. I like things spicy, but not that spicy... I also used smoked paprika vs. regular because when it comes to baby back ribs that mild smoky flavor pairs well. We did these on the grill and basted them with KC Masterpiece BBQ sauce. There's nothin' like really good BBQ'd ribs!-28 Jul 2011

My husband Rob gave this a high 5, I thought it was way to spicy for myself but he was awwing and hmmmming as he was eating his steak, so he says i can make his steaks this way again. I didn't have dried chipotle pepper so I used red ground cayenne pepper I had on hand. And obviously it worked out very well because he cleaned his plate. This is a really versatile spice mix. Try making soup from the Roasted Chipotle & Garlic Spice Mix by adding it to hot water or broth. Try a simple sour cream dip. I made mine with this Chipotle Chile Seasoning (that&rsquos my Amazon affiliate link which if you buy something I&rsquoll get a small percentage but it won&rsquot cost you any extra). If you already have a Chipotle Spice or powder, feel free to use it. The one that I used isn&rsquot too hot, so keep the spice level in mind for this dip. The cheese will help cut some of the heat from the chipotles. And, personally, I like a little tingly-ness in many of my dishes.

  • Use fresh spices
  • Adjust the spice amounts – Based on your preferences, you can adjust how much of one spice goes into the mixture. For example, not a huge fan of garlic? You can reduce or remove the spice altogether.
  • Can I use another chili powder? – You bet you can! Use whatever kind of chili powder you can get your hands on. It doesn’t have to be any special brand or type, although a chipotle chili powder would be the best for this mixture.
  • How to use chipotle seasoning – You can use this seasoning on a plethora of dishes. Baked meats, Mexican dishes, and more. Some of my favorite recipes to use it with are my Crockpot Chili , Spaghetti Squash with Garlic Chicken , or my Juicy Oven Baked Chicken Thighs .
  • How much should I use? – This is honestly up to you and your taste preferences. For chili, you’ll want to use more, 1-2 tablespoons. However, you might not need that much for something like baked chicken. So, you’ll have to start out with a small amount and add more as you think it needs it.

McCormick® Chipotle Taco Seasoning Mix

PREP TIME: 5 minutes
COOK TIME: 10 minutes
Makes 6 (2 taco) servings.

1 pkg. McCormick Seasoning Mix
1 lb. lean ground beef or turkey
¾ cup water
12 taco shells or flour tortillas (6-inch)

Assorted Toppings:Shredded lettuce, chopped tomatoes, shredded cheese, salsa, sour cream or chopped cilantro.

1. BROWN meat in large skillet on medium-high heat. Drain fat.
2. STIR in Seasoning Mix and water.
3. BRING to boil. Reduce heat and simmer 5 minutes, stirring occasionally. Spoon into warm taco shells. Serve with desired toppings.

Chipotle Beef Nachos: Cook and stir 1 lb. ground beef and 1 cup each chopped onion and red bell pepper in large skillet on medium heat 5 minutes. Stir in Seasoning Mix, 1 can (16 oz.) black beans, drain and rinsed, and ¼ cup water. Simmer 5 minutes. Spread 8 cups restaurant-style tortilla chips on 2 lightly greased foil-lined baking pans. Top with meat mixture and 2 cups shredded Cheddar cheese. Bake in preheated 375ºF oven 5 minutes or until cheese is melted. Sprinkle with ¼ cup thinly sliced green onion. Make 12 appetizer servings.

DIY Seasoning Blends

Though we no longer sell our pre-mixed seasoning blends, you can still make them yourself at home any time they’re mentioned in an older Tupperware recipe.

  • Sprinkle over freshly popped popcorn
  • Toss with your favorite snack crackers
  • Use as a rub on beef, chicken, or fish
  • Mix with oil and vinegar and use as a marinade
  • Mix with a stick of butter for compound butter
  • Mix into sour cream for a quick dip.

Each yield approximately 2 cups.

DIY Cinnamon-Vanilla Seasoning

Forget vanilla extract. This all-natural seasoning tastes scrumptious when sprinkled over sugar cookies right before popping them into the oven.

1¼ cups granulated sugar
¼ cup brown sugar
½ cup ground cinnamon
1 tsp. coarse kosher salt
1 vanilla bean, cut in half lengthwise*

  1. Combine ingredients in Counterscaping Dry Container, insert vanilla bean halves, shake to combine and seal.
  2. Store up to 6 months.

*Or substitute 3 tbsp. vanilla powder.

DIY Cilantro-Mojo Seasoning

Punch up a pork roast or chicken breast with a Cuban-inspired seasoning blend.

Zest of 6 limes
Zest of 2 lemons
2 tbsp. coarse kosher salt
3 tbsp. garlic powder
3 tbsp. onion powder
3 tbsp. dried oregano
¼ cup dried cilantro leaves
2 tbsp. ground thyme
1 tbsp. ground cumin
½ tsp. cayenne pepper
1 tsp. ground black pepper

  1. In the base of the Power Chef® System fitted with the blade attachment, combine zest and salt until well blended. Let stand 10 minutes.
  2. Add garlic powder, onion powder, oregano, cilantro, thyme, cumin, cayenne and black pepper. Pull cord 10 to 12 times to combine.
  3. Transfer mixture to a Counterscaping Dry Container and seal. Store up to 3 months.

DIY Steak & Chop Seasoning

Before reaching for that store-bought dry rub, try this herby, aromatic blend instead.

½ cup black pepper
¾ cup dried minced onion
6 tbsp. garlic powder
3 tbsp. caraway seeds
1 tsp. crushed red pepper flakes
¼ cup coarse kosher salt

  1. Combine ingredients in Counterscaping Dry Container, shake to combine and seal.
  2. Store up to 6 months.

DIY Southwest Chipotle Seasoning

The ideal smoky seasoning blend for fajitas or tacos.

2½ tbsp. smoked paprika
9 tbsp. ground cumin
1 ½ tbsp. garlic powder
2 ½ tbsp. chipotle powder*
2 ½ tbsp. dried cilantro
5 tbsp. onion powder
2½ tbsp. granulated sugar
4 tbsp. coarse kosher salt

  1. Combine ingredients in Counterscaping Dry Container, shake to combine and seal.
  2. Store up to 6 months.

*Or substitute chili powder for chipotle powder.

DIY Italian Herb Seasoning

This Italian blend is just begging to be sprinkled into marinara sauce.

10 tbsp. dried oregano
5 tbsp. dried basil
5 tbsp. dried parsley
7½ tbsp. onion powder
4 tbsp. garlic powder
5 tsp. coarse kosher salt
5 tsp. crushed red pepper

  1. Combine ingredients in Counterscaping Dry Container, shake to combine and seal.
  2. Store up to 6 months.

DIY Chocolate Seasoning

Ditch the salt and butter and season your popcorn with this luscious blend made with cocoa and espresso powder.

1 cup unsweetened cocoa powder, sifted
¾ cup granulated sugar
1/4 cup dark brown sugar
1 tbsp. instant espresso powder (optional)
1/2 tsp. kosher salt (optional)
1 vanilla bean, cut in half lengthwise*

  1. Combine ingredients in Counterscaping Dry Container, insert vanilla bean halves, shake to combine and seal.

Curry Blend

Aromatic, a little sweet and a little spicy, great for chicken, vegetables, stir fry and soup.

4 tbsp. ground turmeric
8 tbsp. ground cumin
4 tbsp. onion powder
4 tbsp. ground cinnamon
4 tbsp. ground coriander
2 tsp. ground clove
1 tbsp. ground cardamom
2 tsp. granulated sugar

  1. Combine ingredients in Counterscaping Dry Container, shake to combine and seal.
  2. Store up to 6 months. Shake before using.

Deep flavor from the deep South, this BBQ blend goes on just about everything from burgers and chops to even potato salad.

1 cup instant coffee or instant espresso
12 tbsp. brown sugar
3 tbsp. garlic powder

Dry rubs: Not just for meat anymore! Although – this Sweet & Smoky BBQ Dry Rub Mix can totally be used for meat. This stuff can be used for everything. Except maybe bread. Or … ice cream. Okay, so maybe not everything. But it can be used for a whole lot.

This versatile dry rub recipe starts with a good dose of brown sugar. Then it’s loaded up with smoky spices like smoked paprika, chili powder mix, and dried chipotle chile. Then we throw a few more herbs and spice in there for mega flavor goodness. Mega Flavor Goodness – totally an awesome new blog name. But I digress.

Thyme and rosemary. Mustard powder. Even a smidge of ground allspice. Do it!

Just rub it on and grill away. Or sprinkle it over the top of something you’ve already grilled. Or make a marinade with it. This Sweet & Smoky BBQ Dry Rub Mix is your oyster! (Hmm. It would probably be good on oysters, too, if oysters are your thing.)

Recipe Summary

  • 1 pound bulk hot Italian sausage
  • 2 pounds ground beef
  • 5 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon ground coriander
  • 2 cloves garlic, minced
  • 1 large onion, diced
  • 1 (28 ounce) can diced tomatoes
  • 1 (15 ounce) can tomato sauce
  • 1 (14 ounce) can kidney beans (Optional)
  • 2 teaspoons minced chipotle peppers in adobo sauce
  • 1 teaspoon salt
  • ground black pepper
  • 1 (6 ounce) can tomato paste

Cook sausage and ground beef in a large pot over medium-high heat until lightly browned and crumbly. When the meat has released its grease, and has begun to brown, drain off accumulated grease, and season with chili powder, cumin, and coriander. Cook and stir for 1 minute until fragrant, then stir in the garlic and onion. Cook until the onion has softened and turned translucent, about 4 minutes.

Stir in the diced tomatoes, tomato sauce, kidney beans, chipotle peppers, salt, and pepper. Bring to a simmer, then pour the chili into a slow cooker. Cover, and cook on Low for 8 to 10 hours. Stir in tomato paste an hour before the chili is done.
